Lemon Breakfast Pudding
This is one of my favourite ways to start the day! It’s a luscious lemon pudding.
Packed full of healthy essential fatty acids, fiber and sublime, taste-bud tingling flavour, my luscious lemon pudding makes a healthy and satisfying breakfast.
The base for this pudding is avocado. There are many variations of this recipe. However, to transform this recipe from a treat to a breakfast option, I recommend folding in a couple tablespoons of chia and hemp seeds. These seeds provide an excellent dose of plant based protein, along with additional healthy fats and fiber. These three elements are what keeps us feeling full from one meal to the next. In addition, a nutrient dense breakfast helps properly fuel our bodies so we feel energetic and focused.
The best thing about this breakfast is that you can make it ahead of time so it’s quickly ready to go on a busy morning. Here’s how to make this lovely breakfast:
Dr. Laura’s Luscious Lemon Pudding
1/2 cup almond milk (or coconut, rice or cashew milk)
1/4 cup lemon juice
1/4 cup maple syrup
1 tsp vanilla
2 tbsp hemp seeds
2 tbsp chia seed
Place diced avocado, milk, lemon juice, maple syrup and vanilla into a food processor or blender and process until smooth. An immersion blender works well here, too!
Store in fridge until ready to use.
When ready to serve… remove from fridge… place 1 cup of pudding in bowl or container for transport if taking it to go. Fold in hemp and chia seeds. Let stand a few minutes. Stir well. Enjoy!
